We started with our amber ale, allowing 100% wild yeast into the beer (we call it our Weldlambic) outside of the brewery. We then added the beer to our French Oak wine barrel, inoculating the barrel with wild yeast. Each new edition of Carmen sits in the Weldlambic barrel for one year. Carmen I sat in the barrell for one year before being bottled. As soon as Carmen I was removed, we filled our Weldlambic barrel with West Coast IPA and Palisade Peaches for Carmen II. Once Carmen II was bottled, we filled our barrel with Oatmeal Stout for our 2017 release of Carmen III. Now that Carmen III is bottled, the Weldlambic barrel is filled with yet another beer--Carmen IV is coming to the brewery next year. |
