Born in the fall when Jeff was preparing to host the big family Christmas at his house, he wanted to make a warming beer to get him through the holiday season. Jeff imagined a beer that would go with ham and a Christmas dinner, and provide warmth for a snowed-in day. This is a beautifully dark, sticky, resonating beer to go with all of those heavy holiday meals. This was the beer Jeff wanted to share with his family (and your family) at Christmas.
Cabernet Sauvignon barrels brighten notes of cherry and raisin over the backdrop of a robust Belgian dark grain profile to bring forth a lightly tart yet refined finish. Chapter three is truly our rising action of utilizing one of the brewer's secret tools that may be best suited for this beer's possessor: time.
